Sweet and sour chicken

Sweet & sour chicken (or Pork) is a great way to combine veg, fruit, protein and carbs. I serve it with rice or egg noodles.  My daughter is not crazy about bean sprouts but I love them and she always is willing to try them. It´s also nice to put bamboo shoots which are rich in nutrients you can buy these in a jar or tin.  It´s a really quick dish and with the vitamin A & C from the pineapple and also vitamin C from the orange juice it´s perfect for the whole family.  Don´t be afraid to cook the veg quick in this recipe - more nutrients and nice and crunchy.


Ingredients
Serves 3

400 g  free range chicken breast, cubed
1 large onion sliced thin
1 green pepper sliced thin
1 carrot sliced thin
olive oil
1/2 glass of fresh orange juice
corn flour (maicena)
2 tbsp of honey
2 tbsp vinegar
1 tbsp tomato puree
beansprouts / bamboo shoots or veg of your choice


***TIP*** If you are introducing new veg to your children always add it with something you know they like. I always add carrots because I know my daughter likes them together with another new veg. Although green pepper or beansprouts are not her favourite she always trys them especially if she sees Mummy & Daddy eating  them too!. Make sure the plate of food is colourful, nicely presented, and not a huge portion**


Method
Coat the cubbed chicken in corn flour and cook in a little oil until browned and reserve on kitchen paper.
Wash and cut pepper into thin slices. Peel and cut the onion and carrot again thinly. Peel and chop the pineapple into small cubes similar to the chicken.  Cook the onion with a little oil and add the carrot after a couple of minutes add the green pepper. Finaly add the pineapple and cook for 5 minutes.
Mix together the orange juice, honey, vinagre and tomatoe puree. Combine the cooked chicken with the veg and add the sauce, after 1 minute it´s ready to serve.
