My daughter loves broccoli and loves salmon, but she is not a huge fan of pasta. The different colours and textures together with the dressing makes this an interesting alternative way to serve salmon. It´s so simple and quick to do, perfect for lunch or dinner.
Method
Wrap the salmon fillets in parcels (foil or parchment paper) add a little ground pepper and lemon juice.
By wrapping the fish in a parcels it keeps the fish moist and retains the flavours and juices. (also less washing up ! )
Cook for 15- 20 mins (depending on fillet size.) 180·C.
Steam the broccoli for 5 minutes.
Steaming vegetables results in more nutritious food than boiling because fewer nutrients are lost in the water. Folic acid and vitamin C are retained significantly better through steaming than through boiling. You do not need any fancy equipment. My steamer is so basic but is so much quicker than my mothers electric machine and cheaper!
Cook the pasta of your choice as per the instructions (al dente). Drain.
Mix up the dressing in a jar, give it a good shake. I normally drizzle the dressing onto individual dishes (my daughter only likes a little and I loves lots !).
Mix the drained pasta, broccoli and flaked salmon in a bowl. Serve and drizzle over dressing.
Left over dressing can be kept in the fridge for salads or marinating meats or fish.
Like the dressing idea, will do that!
ReplyDeleteI make all my own dressings and marinades, the jar shake is a simple way to do so, it may go a little solid in the fridge after a day but just leave it out of the fridge 10 mins before you need to use it again.
