Carrot cupcakes

Perfect for freezing!

LUNCHBOX SNACK BREAKFAST

MAKES 12 CAKES
CAN BE FROZEN UN-ICED 

These are a family favorite and so easy to make. We often make these together freeze 6 and keep the others for breakfast or afternoon snack.  My husband prefers them without the icing and in general I have noticed it is not a big thing here (icing or frosting). Most English people love Carrot cake, for the Catalans it is a little strange ¨magdalenas de pastanager¨ but they always go down well with everyone. I put one on these in my daughters ¨Hello Kitty¨carmanyola (lunch box) frozen and when it was time for her mid morning snack in P3 she had a not so warm or sticky healthy cake, once a week!

*tips -  By freezing cakes, biscuits and bread you always have healthy snacks to hand in emergencies.
I sometimes put raisins or walnuts in too!


Ingredients
•    175g brown sugar
•    100g wholemeal self-raising flour
•    100g self-raising flour
•    1 tsp bicarbonate of soda
•    2 tsp mixed spice
•    zest 1 orange
•    2 eggs
•    150ml sunflower oil
•    200g carrots , grated
•    orange coloured sprinkles , to decorate
 

Heat oven to 180C/160C fan / gas 4 and line a muffin tin with 12 cases. In a large bowl, mix sugar, flour, baking soda, mixed spice and orange peel. Beat eggs and oil, then stir into the dry ingredients with the grated carrot. Divide the mixture between the cases and bake for 20-22 minutes until a skewer poked comes out clean . Cool on a wire rack before icing.
For the frosting, beat the butter until soft, then beat in the cheese, icing sugar and vanilla. Use a palette or cutlery knife to swirl the icing on top of the cakes, then sprinkle with decorations.
FOR THE ICING
•    100g butter , softened
•    300g soft cheese
•    100g icing sugar , sifted
•    1 tsp vanilla extract
